The Occhi Di Bue, translating to 'Ox eye' is a typical italian biscuit made from sandwiching two classic shortbreads with a jammy fruit or chocolate nutella filling.
It can be found in almost every pastry shop or cafe you enter in Rome and it very quickly became a favourite and ‘go-to’ item of mine through my travels.
So simple but so delicious with the perfect amount of sweetness.
Occhi Di Bue
Biscuit: Butter, flour, vanilla, lemon, orange, eggs, icing sugar, salt.
Filling: Nutella or fruit jam.
